Healthy Slow Cooker Meals on a Budget
Have you ever wanted to eat healthy dinners without having to slave away in the kitchen or spend a ton of money? Healthy freezer slow cooker meals is the answer you are looking for. Here are a few of my favourites.
Potato Chedder Soup
5 cloves garlic
32oz. chicken broth
1/2 stick butter
2.5 teaspoons salt
1 teaspoon pepper
1/2 pint (1 cup) half & half
1 cup shredded cheddar cheese
3 tablespoons green onions (extra for garnish, optional)
sour cream (optional)
Peel and chop your potatoes.
Chop one onion.
Chop five cloves of garlic.
Combine the garlic, chicken broth, potatoes, onion, butter, salt, and pepper. Cook in the slow cooker for 7 hours on low and 1 hour on high.
After 8 hours of cooking, mash the potatoes.
Add the half & half, cheese, and green onions.
Serve with a dollop of sour cream and a pinch of green onions (both optional).
Slow Cooker Tuscan Sausage & White Bean Soup
1 package of smoked sausage
2 14 oz cans of white northern beans- drained
2 14.oz cans of chicken broth
2 C. of fresh spinach
28 oz can of tomatoes-drained
shredded Parmesan cheese
2-3 cloves of garlic minced
1 T of Italian herbs
– Cut your sausage in 1/2 in pieces put in your crock pot.
– Add your drained beans.
– Pour your spinach into the slow cooker.
– Add your drained tomatoes. Are you surprised to see yellow tomatoes? I can my own and mix them with red ones, We love the taste as well as the colour.
– Stir everything together.
– Cook on high 4-6 hours or low for 6-8 hours. When done dip up and sprinkle some Parmesan cheese over the top
Slow Cooker Mexican Tomato, Rice and Veggie Soup Recipe
1 tablespoon olive oil
2 cloves garlic, minced
1 medium onion, diced
1/2 teaspoon cumin
1/2 teaspoon chili powder
1- 15.5 ounce can black beans, drained and rinsed
1- 14.5 ounce can Red Gold Petite Diced Tomatoes with Green Chiles
1- 14.5 ounce can Red Gold Petite Diced Tomatoes with Lime Juice and Cilantro
1- 11 ounce can white corn
3 cups water
1/2 cup long grain white rice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup cilantro, chopped
1 tablespoon freshly squeezed lime juice
sour cream and shredded cheddar for topping (optional)
Heat the olive oil in a small skillet over medium heat.
Add the garlic, onion, cumin and chili powder and saute for 5 minutes.
Add this and all ingredients to a 4 quart slow cooker except the cilantro and lime juice.
Cook on high for 3-4 hours, or low for 6-8 hours, until rice is tender.
Stir in cilantro and lime juice, then serve topped with sour cream and cheddar.
Dr Pepper Slow Cooker Roast With Pork
1 can of Dr Pepper (or 12 ozs)
Worcestershire sauce (I used a shot glass full)
1 1/2 Teaspoon of Minced Garlic
Salt and pepper if desired
Put all the ingredients in the slow cooker and put on low setting. Enjoy!
Easy Slow Cooker Chicken Tacos
3-4 Chicken breasts or you can use the cheaper chicken thighs
Entire jar of your favorite Salsa
Tortillas or even hard tacos
Shredded lettuce – optional
Pico de Gallo – optional
Sour Cream optional
Cheese – optional
Add your chicken to the crock pot and the entire jar of salsa.
Cook on low for about 4-5 hours. Then shred your chicken with two forks and let it sit for another 10-15 minutes in the crock pot.
Serve over hot tortillas and add any toppings your would like.
Slow Cooker Southern Style Pork Ribs
1 packet McCormick’s Slow Cooker Southern Style BBQ Seasoning
1 cup Ketchup
1/2 cup honey
1 clove garlic (minced)
1/2 Medium red onion (cut into quarters)
2lb pork ribs (cut into four sections)
– Mix the seasoning packet, ketchup, honey and garlic in a small bowl
– Place the cut onion and ribs in the slow cooker and pour the sauce on top. The onion is cut into large pieces for flavor only.
– Cook on low for 8 hours or high for 4 hours. Serve with couscous or rice & corn
